Restaurant Mastard by Barbeau Desrosiers

Montreal-based studio Barbeau Desrosiers has brought its finely tuned, quietly expressive approach to the redesign of Mastard, a neighborhood restaurant on Bélanger Street that was recently awarded its first Michelin star.

The project, completed in spring 2024, reflects a close creative dialogue between the studio and chef Simon Mathys – a collaboration rooted in a shared desire to translate the restaurant’s culinary philosophy into a spatial experience.

Led by founders Charlotte Barbeau and Leila Desrosiers, studio is known for crafting interiors that feel composed, purposeful, and sensorially rich. Specializing in high-end residential, hospitality and retail environments, Barbeau Desrosiers brings a material sensitivity and architectural restraint to their work, qualities that align closely with Mastard’s own ethos of precision and poise.

Located on Bélanger Street, the reimagined restaurant is shaped by a pared-back, minimalist language that places the focus firmly on the food and the art of hospitality. Soft, indirect lighting lends a warmth to the interior, while a refined palette of natural materials – wood, stone, fabric – is deployed with quiet confidence. Earthy tones and tactile surfaces evoke a sense of calm that unfolds gradually, inviting guests to slow down and settle in.

Acoustics played a defining role in shaping the spatial layout. At the centre, a low, curved wall gently defines an open dining area, its ceiling visually lowered by a suspended grid of textile panels that both soften sound and enhance intimacy. Flanking this central volume are smaller alcoves that offer moments of privacy, while a high counter near the kitchen fosters a sense of immediacy between diners and the culinary team.

Throughout, the interior balances clarity with warmth. The detailing is understated but deliberate: a spatial parallel to the restaurant’s menu, which privileges restraint without sacrificing depth. In this way, Barbeau Desrosiers has created more than just a backdrop for fine dining. The studio has designed a setting that mirrors the discipline and emotion of the food itself: modest in appearance, but deeply expressive in experience.
